When used in processed meat such as hot dogs and beef sticks, it increases the rate at which nitrite reduces to nitric oxide, thus facilitating a faster cure and retaining the pink coloring. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines. When used as a food additive, its E number is E316. Preparation: Sans décongélation préalable. Au four à micro-ondes : Décollez le coin de l'opercule sur la barquette. Réchauffez 5 minutes à la puissance maximales pour un four de 900 watts (6 minutes pour 750 watts). Retirez l'opercule de la barquette et laissez reposer 1 à 2 minutes avant de déguster. Au four traditionnel : MISE EN GARDE : la température du four ne doit pas dépasser 200°C (th7). Préchauffez votre four à 180°C (th6). Retirez l'opercule de la barquette et laissez réchauffer 20 à 25 minutes environ. Les temps de cuisson sont indicatifs et peuvent varier selon la puissance de votre four.
